Curried Sweet Potato and Lentils



This is a simple weeknight meal that you can make in your slow cooker. I made it for us last night and it was jam-packed full of flavour. I served it over brown rice couscous.



Here's what you'll need:

3 medium sweet potatoes, peeled and diced
1 carrot, peeled and chopped
1 large onion, chopped
3 1/2 cups vegetable broth
1 1/2 cup uncooked red lentils
1 can of coconut milk
1 tsp tumeric
1 Tbsp garlic powder, ginger powder, and coriander
2 Tbsp curry powder
1/2 tsp red pepper flakes
sea salt and pepper to taste


In a slow cooker, combine the sweet potato, carrot, onion, vegetable broth, and spices, and cook on high for three hours. Then, add in the uncooked red lentils and cook on high for an additional hour and a half. Add more broth or water if necessary. Finally, add in the coconut milk and adjust the spices to your taste, cooking for another half hour on low.
